Goat Cheese Recipes!
Rich in flavour and high in nutritional value!
Try making some yourself - it's pretty easy, actually!
Simple Soft Cheese
(*This recipe will not work well with pasteurized milk)
Ingredients:

half gallon raw goat milk
-
2 - 4 T vinegar
-
a thermometer capable of the 180-200°F range
-
cheesecloth or butter muslin
-
coarse salt
Directions:
-
Heat milk on medium heat in stainless steel pot to at least 170°F
-
Remove from heat and stir in vinegar
-
Stir for a few minutes until milk has curdled
-
stir in 1/2 T of course salt
-
Let sit for 30 min
-
Pour off excess whey
-
Pour through cheesecloth
-
Wrap curds in cheesecloth and hang
-
Drain until desired texture
-
Scrape cheese out of cheesecloth
You can use on toast, in salads, with pancakes or whatever you wish. Experiment using herbs (added at the end when you stir the cheese). For larger curds, heat the milk well in the the 190's before curdling. Experiment with curdling temperature and drying time to get the cheese that meets your needs. Happy experimenting!
Variations of the above Simple Cheese:
TO MAKE BOURSIN:

process cheese

garlic cloves

thyme

FOR CREAM CHEESE:
-
process cheese with a bit of milk or cream until very smooth.
FOR RICOTTA:
-
briefly process cheese with a few grains of nutmeg and milk to moisten.

Add more milk plus sugar and a drop of vanillato make a dessert topping
-
Add fruits, chocolate and/or liquers for a no-cook filling for pies, tortes, cakes, etc.
NATURAL COTTAGE CHEESE
Ingredients:
-
1 GALLON MILK
-
JUICE OF 2 LEMONS
-
6 TABLESPOONS CREAM (OPTIONAL)
Directions:
-
Heat milk to 186 degrees
-
Slowly add lemon juice (about 1/2 cup)
-
Cool until it can be handled
-
Drain, rinse and salt if desired and add cream
-
Use fresh as you would any cottage cheese.
Cheese Recipes
1. HERB CHEESE:
-
To milk add 1/2 cup of dry sherry and spices (oregano, thyme and basil)
-
add salt to taste
-
proceed with cheese making
-
press to form desired shape
-
Roll in minced parsley, ground pepper, chopped nuts, etc.
2. NACHOS:
Combine the following in a food processor or blender :
-
eight ounces cheese
-
one or two seeded jalapeno peppers
-
1 small garlic clove or a small onion
-
and salt to taste
-
Arrange large taco chips on cookie sheet and top each with spoonful of cheese.
-
Bake at 350 degrees for about 10 minutes
-
serve hot
3. DILL DIP:
Combine the following in a food processor or blender :
-
eight ounces cheese
-
one garlic clove
-
1/2 cucumber (seeded but not peeled)
-
one tablespoon dry dill
-
salt to taste
-
Process, and serve with raw vegetables
4. CHEESECAKE:
-
To the milk add 1/2 cup of a liqueur - amaretto or kirsch, etc
-
proceed with cheese making
-
use cheese in your favorite cheesecake recipe
5. PECAN COFFEE ROLL:
Make yeast dough:
-
one package yeast
-
one teaspoon sugar
-
7/8 cup warm water
-
Mix and proof
-
Add three cups flour
-
1/3 cup sugar
-
one egg
-
two tablespoons butter
-
Mix, knead and let rise twice
For filling:
Combine the following in a food processor or blender :
-
eight ounces vinegar cheese
-
two eggs
-
1/4 cup milk
-
1/2 teaspoon cinnamon
-
Process until smooth
For topping:
Combine the following in a food processor or blender :
-
1/2 cup sugar
-
1/2 cup flour
-
1/2 cup butter
-
1/2 cup pecans
-
Process briefly
To assemble:
-
roll dough into rectangle with the short side matching the length of your pan
-
Spread the cheese filling and roll up, pinching the sides and ends to seal
-
Place in a greased pan, oil the top, cover with damp cloth and let rise a third time
To bake:
-
slash top and gently pull to expose the filling
-
Sprinkle topping over the roll and bake at 375 degrees F for one hour
-
Serve hot with butter.
